I don't really know all the chapters nor anything but... whatever would be fitting for a sarcastic, sardonic, seemingly disgruntled apothecary. Then, of course, a name that would fit with such chapter/origin/diabeetus.

Well, if you REALLY want to check out the Chapters... here ya' go:
Space Marine Chapter List
As far as names go, the standard that I'm noting is either Latin (the dead language) or Roman, Greek, Germanic, etc.
This is a GREAT site for all kinds of names:
Behind the Name
I suppose you could always be a Flesh Eater named Bulvi.

Oh great, that's just what we need. A cannibalistic apothecary.
"Don't worry brother, its just a flesh wound."
"Trust me, I'm a doc."
"Why are you making the wound bigger? Did you just cut a piece of my arm off?"
"Trust me, I'm a doc."
"Hey, don't put that in your mouth!!""
"Om Nom Nom."

Photios, the not-cannibalistic 'Angels of Iron' Apothecary
Photios is from ancient Greek 'Phos', meaning Light, named this way as to never sway from the path of the Emperor and to be, himself, a beacon unto others.
As far as chapters go, I went with whatever caught my eye as being cool. Angels of Iron seemed like a nice choice. What happens when there is just no information on the chapter? Doesn't each chapter grant different skills or something?
Anyways, sardonic/sarcastic Apothecary, reporting for duty. Hehe... duty.

Actually, if you're allowing us to break the game from minute one, I'll take a Mortifactor librarian with Blood Angels skills. (If understand how that works.)

Might be a little difficult considering the Mortifactors are an Ultramarines sucessor

This is true. I can do with Ultramarines skills, if, again, this is how skills are split.

I like that name !
Your Angels of Iron are descended from the Iron Knights, a second founding Chapter of the Imperial Fists . Your Primarch is Rogal Dorn.
Iron Knights
Imperial Fists
Rogal Dorn
Since your Chapter hails from the Imperial Fists, it will be easier to create their skill lists since the Imperial Fists are well defined.

Yes, that would be do-able. The Mortifactors, despite their appearances and how they operate, do follow the Codex Astartes like the Utramarines do... it's their traditions that set them apart. The Chapters skills lists are what define that Chapter and that particular Space Marine in "Solo" mode. When in "Squad Mode" those traits fall to the wayside, making the squad more deadly.
As far as the rules go, you may have noticed that the Devastator pdf from the above article didn't mention any skill advances in the experience table at the bottom, but only Talents.
That's because all Deathwatch have "Deathwatch" skills taught to them for being in Deathwatch (such as Forbidden Lore: Xenos, etc). Their primary source of skills comes from their home Chapter... this way, the Raven Guard are ultra sneaky while the Ultramarines have skills related to Tactics, etc.

UPDATE:
Systems in the Balance
Jericho Reach Map
Nice to see that they are fleshing out this quadrant. This is just one of the many quadrants that you'll travel to in search of the Emperors enemies.

Wow, that's a pretty extensive list they got going.
I also find his created chapters amusing, although a couple seem to be set-up to fall to Chaos if they haven't already.

UPDATE:
Deathwatch Collectors Edition on sale!
Check it out!
Deathwatch Collectors Edition Details
Un-boxing Video Detailing the Book
(requires Quicktime)
Probably the coolest book that I'll ever own (as far as looks go).
EDIT:
Got my pre-order in, whoohoo!
"Brother Drakken Angelous of the Ultramarines" is who my Apocryphon Oath is dedicated to. Sounded pretty cool, so I went with it.
We are the Ultramarines, the Sons of Guilliman. Whilst we draw breath, we stand. Whilst we stand, we fight. Whilst we fight, we prevail. Nothing shall stay our wrath.

What??
The Buckle strap on the inside is actually Velcro?
That was the deal breaker.
I can now justify Not buying the book and spending the 200 on much needed school supplies and not feel bad about it.

Yeah, I thought that too... but then I realized that I could just replace it with an actual belt buckle VERY easily if I wanted.

Probably the most awesome outfit that I've seen over the years that actually portrays a 40K character properly (from Games Day Baltimore 2010):
